Mozzarella and tomato salad
INGREDIENTS

2 fresh buffalo mozzarella (260g), torn into bite-sized pieces
500g cherry tomatoes, halved
2 tablespoons torn fresh basil leaves
2 tablespoons extra virgin olive oil

METHOD

Arrange cheese and tomatoes on serving platter and top with basil. Drizzle with oil; sprinkle with salt and freshly ground pepper.
